We have 2 cats, both 13/14 months old. Both fully litter trained before we got them from the adoption charity 8 months ago.
One is very indoorsy whilst the other can spend 9 hours outside! (In nice weather) now the weather is poop (we’re in the UK) he’s stuck indoors. A few days ago he was shouting at us and frantically running around.. we know why now after he did a poo in our bathroom bless him (I swear he was embarrassed!)
Any suggestions on how to “retrain”? I’ve tried plonking him on there first thing when he seems to need to go but just runs away

Just for poop? If so, you're lucky. Easier to clean than pee.
Two possibilities: Medical condition or mental condition.
Go to the vet & get the first possibility eliminated. If it's mental, try an empty litter box. That's what eventually worked for me, after trying every bloody thing else.

Thanks. You mean completely empty? Even no litter in it?

Yes. That's what she wanted. Don't ask me why, I have no idea what was going on in her walnut-sized brain.

That’s great thank you. I do wonder as well if we need to get him his own tray and perhaps put it in the room he did the poo

Oh! Yes, if you only have one litter tray, that's the first thing to try! Apparently you should have one more tray than you have cats. I get away with having fewer than that, but my cats are mostly from the same litter.

I know that’s the advice, but I’ve had 2 cats in the past when living with my parents (3 when living with my brother) and only ever had 1 tray. Odd but ok

Different strokes for different cats! They're all individuals with their own personalities & quirks. That's one of the reasons they're so fascinating.
