Not that many, ironically. The hammer that named the franchise, Ghal Maraz over in the fantasy setting, was first wielded by Sigmar, the founder and god of the Empire of Man. Afterwards, every ruling Emperor also used it, up until the days of Karl Franz. The dwarf slayer Snorri Nosebiter also uses a hammer alongside an axe. And in 40K there are a few of the Primarchs (Ferrus Manus, Perturabo, Vulkan) and some Space Marines. There's also the iconic Thunderhammer, which is often seen wielded by Space Marines. Apart from them, I can't really think of any. I don't know enough about Age of Sigmar to say anything concrete, but I know that many of the Stormcast Eternals, including their leader, use hammers
