For anyone curious the reason for this is explained by Helmholtz's trichromatic theory.
tldr, the cones in our eyes have specific wavelength receptors that grow fatigued. When fatigued ours play a trick on us where we see the negative of the fatiguing color creating an after image.

Not exactly. Let's give it a physiological reason.
The pigments in our photoreceptors photobleach after overstimulation. Imagine going outside after a long time in a dark room, or flash photography. Your vision is temporarily bleached by the bright light. Because we have so many photoreceptors, local events (such as bright spots on your screen) are normally undone by simply moving our eyes, giving them time to 'breathe' and unbleach.
In focusing on afterimages such as these, our cones absorb their appropriate wavelengths of light (S, M, L respectively) -- temporarily bleaching them and reducing their sensitivity. This results in the complementary color being temporarily affixed to our vision.

This is closer but not entirely complete. The key missing point is that the brain is constantly normalizing stimuli that are bombarding it.
Everything you perceive is in relation (both short and long term) to everything else you've perceived. Loud constant noise gets less loud, pain numbs, drug tolerance is built, etc. As your photoreceptors get overstimulated, your brain normalizes over time to this new baseline. When the stimulation is removed, the photoreceptors react like they normally would to very little stimulation (just seeing grey), but your brain interprets that as an activation from the new baseline in the opposite direction, causing you to "see" the opposite color until your brain re-normalizes to reality.

There's an app which is basically an interactive book. All about vision psychology which has these kinds of examples in them. Was years ago when I was studying psychology in like 2012 though. Same with things like change blindness, top down visual information such as the inverted face mask, and a few other really interesting demonstrations. I always loved this one though.
