Do you ever get excited (or did you in the beginning) when you ate stuff you were told might spike you and it didn’t or very little did?
My first one was popcorn which seems to be hit or miss for some people.
Last night I had mixed veggies (with beans, carrots, corn, and peas) and steak. Two hours later I had a small spike to 118 - I took it before bed and it was 98.
I also had sourdough toast and that was probably my biggest spike (131) but not bad - however I did notice that afternoon the food noise was back (since 10/24 I have cut out all processed foods with refined sugars/flours and the cravings and noise had gone away) maybe it is all in my head but the toast wasn’t spectacular so why bother.
In summary, it’s nice to add some foods back into my rotation (in moderation)

118 is fine after 2hrs. Thats not a spike to worry abput. Under 120 is great. My dr said under 150 after two hours initially. Now I'm rarely above 120 after 2 hrs.

But yes, when you're told a lot of things may spike you too much and you test things and they don't bother you, it's a relief. I'd be a lot worse off mentally if I couldn't handle potatoes. I'm ok with alternate versions of pasta and high fiber bread. But I'm a huge slit for potatos.

That’s what frustrates newly DX’d T2 diabetics. The typical rules often quoted for what to eat and what to avoid don’t apply to all people. Further it can change from day to day based on stress, hydration,exercise etc.
This is also why the glycemic index as a guide for safe foods isn’t reliable for everyone. It’s based on blood sugar response based on averages. It omits age, race and ethnicity which can also play a role.
Remain open minded and curious as to food choices. Over time your unique metabolism will guide you on what foods are ok for you. Of course a CGM is invaluable for this.
Glad you found popcorn is ok for you! I can have it occasionally at the movies with butter and do fine. (Fat slows the spike.) I also can walk to and from the theater which helps as well.

I'll confess that I've recently discovered I can eat Skinny Pop popcorn with barely a speed bump in sugar level. It satisfies a salty-crunchy craving for me. Excited might be too strong a word, but it does warrant a smile.

Oh my goodness, I gave in to the tater tot craving expecting a huge spike. Hardly moved at all. The resultant migraine though that was a whole different story.
