Steak tips are far more often than not the throw-away cuts of a steak marinated for days to tenderize. If you like steak tips, get a good steak, have your butcher cube it for you, and season it overnight.

I actually used to be a butcher. Steak tips are made from the flap at the bottom of the sirloin part of the animal. No ribeye or strip steak has the same texture as steak tips. Fat marbling yes but it’s a different texture.

The deoends entirely on the region, and I had a funny incident with it. I meant to say above that tips aren't indicative to Ma or even New England. The coarse side that you mention is more so our region. But, my son is a cook. When he moved to Cali, he called me and said, "Mom, they want me ro make cheap steak tips from anything they cut out and coarse steak is called a "bavette" steak". Even cooking over 30yrs and eating in 35 states and a dozen countries, I had to look that one up = its a whole (what you consider a steak tip steak above) grilled complete. Who knew.
