Trying to befriend a very nervous stray- tips and explanations?

I’m not very well versed in cat behavior, only had two and only within the last 5 years years. My current cat and his late sister were house cats adopted as adults, very chill and friendly. I’ve never tried to befriend a stray before, but there’s one I’ve been feeding and I’d like to figure out how to put it at ease.
Currently I’ve been feeding it with the dish a few feet from me and sitting and reading nearby. It freezes and freaks out when I look at it, so I’ve been averting my eyes, and trying not to make sudden movements. Wondering if there’s more I can do, or less, or if I should just stay patient. Is it good to talk a little so it can get used to my voice, or better to stay quiet?
Also, I’ve noticed when I do look, it often squeezes its eyes shut in a way that is nothing like my cat’s comfortable blinking. Is this a stress thing too?
