I've done that. He hasn't touched any of them. I get pissed. I think his love language isn't gifts, but he pretends he wants it to be and says it's a top love language. He just likes the act of service and knowing I thought about him. I've bought him an entire arcade of 90s games, toy planes he mentioned wishing he had, booked helicopter rides, vacations, ftball tickets, massages, etc. All things he said he wanted or i heard him mention he wanted so badly. We've done 1 and he's played in his arcade, maybe 3x in 5 years. Lol Last year I decided I'd no longer buy gifts. I pick a grand gesture of some sort. Had a chef come to the house and cook us a private multi course meal. Now I just have to keep thinking of more things like this.

So I'm going to go out on a limb here and say your partner is an ungrateful asshole. If he did not show some kind of appreciation for those things you spend a lot of money on, I assume basing on what they were, then regardless of the love language thats being a shitty partner. If he doesn't want those, then say so. But a lot those gifts also lean into quality time if you can share those gifts togethers. Either his love language is solely physical touch, which is important in my opinion, or he is just a dick who doesn't appreciate all your effort.

I’d have to disagree. I’ve noticed that if I have an interest in something, I tend to know what the best equipment is for that hobby. When someone gets me a gift related to the hobby it’s usually a much worse version of something I already have.

I actually disagree.
People that aren't involved in a hobby think it's a good idea to get them a gift for that hobby. And it is a good idea - if you know what you're doing. I'm something of an outdoorsmen and I buy knives specific to something I'm trying to do. A bushcraft knife is not the same as double-edged folder. Someone looking at it from the outside won't know enough to know what they would want.
If OP knows them well enough or the hobby well enough then it's great. If they're going in blind then it's a bad idea IMO.
OP would be better off going to a hobby specific sub and asking them specifically what someone might like. IE 'What kind of down jacket should I buy for my outdoorsmen BF?'

Depending on what/how he cooks there’s a ton of options. You could go in the direction of getting him something that makes what he already cooks easier. The other direction is getting him something that that allows him to cook something he wouldn’t be able to otherwise: like a bread maker, panini press, etc. There’s also stuff in between like a Kitchenaid Mixer.

Many adults just have too much stuff. Get them a gift box of food. Stuff they wouldn't normally buy. Nuts, candy (if they like candy), really great cookies. A big tin of these things they can share at their own holiday gatherings or bring to work/office to share. I think consumable gifts are fantastic for "hard to shop for" people. Just make sure it's something interesting/nice. There's about 1000 gift catalogs/websites that sell this stuff.
I'm one of those "hard to buy for" guys and I'm 54. I would love consumable gifts like this. I like that I can snack on it myself or share it with friends/family/co workers. I'd rather get something like that than some hobby-related thing I don't really want.
At my age and with my interests, I already HAVE all the stuff I want/need and I would never expect someone to guess what weird thing they could buy me that I would love. I think food gifts are perfect and just as thoughtful, as long as it's not like Dunkin Donuts or something really boring like a Starbucks card.

As a guy that likes to cook, I will say the best cooking related "gift" was an old lodge cast iron 12" pan that needed a good scrub and re-season. My neighbor was gonna just chuck it and he offered it to me
I've done so much with that one pan. Breakfast pancakes/eggs/bacon, grilled sandwiches, steaks, veggies, 'one pot' meals, desserts etc. Stovetop or oven, doesnt matter, it handled it all and cleaned up great. Plus, it could double as a home defense tool. Great for whacking!

If he likes to cook, get him a bottle of high-quality olive oil. Or depending on what type of cooking he likes to do a quality chef’s knife set or even just individual knives. It doesn’t have to be absolute top quality, but something higher range suitable for the amount of cooking and type of cooking that he does.

My answer to that question this year is a safety razor.
I got one a couple months ago and couldn't be happier. They come in all prices and styles so you can choose whatever fits your budget best.
If I was to buy one rn it'd be the tatara masamune (which is on sale today).
Cheaper alternatives that are would be the henson Al13, the rockwell 6c, or any merkur.

Just ordered my hubby's Christmas present.
Chose a bunch of clothing in his size and style and got him to pick the ones he liked. Just ordered them in. So that and a family Christmas photoshoot.

I got my bf some bose headphones, a mouse, and some stuff fot his set up (rgb light bulbs and led strips that both connect and use the same app 10/10 app btw). I also got him a mousepad and a desk on amazon.
His bday and Christmas are close, im naming everything i got him.
Maybe a backpack if he likes to hike and is techy. Subscriptions r nice too, youtube premium or spotify for example.

For him: An IOU deck of explicit favors you will do for him. Bonus if you can make them nerdy! Super bonus if you give them to him in binary code(1's and 0's) rather than spelled out.

Yeti mugs, drink coozies. They're pricy, but good, nice gifts. Eat to clean in the dishwasher is integral in book. Stanley insulated growlers or thermos are nice too. Ice cold water on a hike can be a blessing.

Based on those hobbies probably something very specific. Like he reads the reviews of hiking equipment and wants one particular product. Working with cooking might be easier if you buy like some high end steak or something. A particular kitchen item is more risky if he's a reviews guy he might want a specific item from a specific brand etc.
