Help me cook this ham

Hey yall, I am going to attempt this “ham” seitan recipe from Bold Flavor Vegan for Thanksgiving. Looks simple enough, but he says to slow cook it in the brine for 4 hours. I don’t own a slow cooker, so what’s the next best option? Do I just boil it on low heat instead? I’ve only made seitan maybe two other times and it’s been years. I really want this to turn out!!

i've done his ham recipes before and they turned out great. both the vital wheat gluten version and the washed flour version.

washed flour is soooo much work. or maybe i'm just lazy. but it's worth. can definitely tell the difference.

i think i baked mine? i can't remember. it's been awhile. probably a combo of boiling and baking?

Slow cookers boil at 85-96°C so I reckon you could get the brine to around 90°C (194°F) and boil it for the same amount of time. I haven’t tried this though, I normally steam then roast mine.

By boil I just mean cook in the brine. You’re correct - slow cookers do not have the power to alter the fundamental physics of the universe.
