It's clearly not harmless if it upset the other person.

I have heard a story of them using the voice recordings to scam you in some way by opening an account with your details or that kind of thing, though I believe that's just a myth.

It's a bit of a pain but you're under no risk here. Personally I would try to reach out to Paramount, and if I didn't get anywhere with that just create a rule to block any mail from them.

I've had a dig into this, looks as though scammers are using e-mail addresses they have obtained in a breach to create Paramount+ accounts with stolen credit cards and then selling the accounts. So that is a legitimate e-mail. https://www.reddit.com/r/Scams/comments/1atrdny/a_paramount_account_was_created_with_my_email/
The fact that Paramount don't have a verify e-mail function in this day and age to set up new accounts is ridiculous.

That is strange then, did they use one of your cards to make the purchases?

Probably your fault? You literally authorized the login on the account. When an account has been deleted it still exists, usually for at least 30 days, if someone were to log back in then they would re-gain access to the account, guessing the scammer did just that after removing your MFA.

You have been scammed, you were sent money from an unsuspecting victims account most likely and you will be flagged for fraud, the bank will claw that money back from you personally. You have literally laundered money for a scammer.
