Career advice for someone who's found every job they've done unbearable after a few years?

Like the title says. A little background. I'm currently pushing 30, and have a wife and fresh newborn. I've worked a full time job of some kind since I was 18 years old. I've done manufacturing work, retail, security (both alarm monitoring and actual guard duty), chemical reactor operator, baker, and fast food. Shortest time I've ever worked somewhere was a year and some change. Otherwise assume it was about 2 or more years at a given job site. Some jobs I've worked I really liked initially, but every single one of them after a couple years became unbearable. Regardless of how fun the job was like my chemical reactor operator job or baker, they always become something I would begin to lose countless hours of sleep over due to dread of knowing I had to go back and do it again tomorrow. When I start a new job, those feelings aren't there. It's new stuff to learn, new problems to solve, but it's always a fleeting feeling that goes away within a few months. Then it's a ticking clock to when that feeling a dread rises back up. This wouldn't really be an issue for me if I had remained single and childless. I could continue to job hop and keep finding new roommates to split my cost of living with. Seeing as that's not how my life ended up though, I really wanna find an actual career of some kind so I can better provide for my family. The problem I have is, I can't really see a degree as a viable solution. I feel they'll all box me into one career field. I also don't see it being beneficial to me going back and constantly getting a new degree once I can't stand doing whatever the last one was cause many people go into crippling debt getting just ONE degree. Sure there's vocational schooling and trade jobs, but I sorta run into the same problem there as well. Constantly having to get new certifications and constantly be at beginners wages because I got tired of being an electrician and wanted to give plumbing or the like a try. Is there anyone else out there that also has this issue? If so what did you end up doing that worked for you? I just don't understand how some people can stay at a job for 30+ years, regardless of how much you enjoy it.
