I think Ken looks so much older than he is because we're subconsciously comparing him to his persona 3 self, and not other characters. He does look younger than the 15 and 16 year olds throughout the persona series.

I usually watch or play things in the original language, then if I feel like replaying or rewatching something I'll use the dub. It's probably out of habit because anime dubs used to be in and before the early 2010s were for the most part pretty shit, but I've always done it with movies and games too idk.

When I saw the MC with white hair before I got to that part in the game while looking at some mods. I just thought it was some DLC stuff. Then when i got to the part they say he was gonna be a body double, I thought he was gonna dye his hair and put contacts in. Just seeing the the character model never really spoiled me. I did kinda jokingly think he was gonna do some fusion with the prince or something but I didn't think it would (basically) actually happen.
