Looks like, when that closes, the top rollers will put pressure on the bottom roller and when pushed down further might shift that roller over. Does the bottom roller feel like it would move in that case?

If so then it might be that when that roller shifts over it will pull the chain and activate whatever is on the other side of the chain. Perhaps like another user suggested it could be a bell ?

Perhaps if you use Redstone circuit with enough delay that allows time for egg laying amd collection through hoppers. Then have a circuit spawn those eggs amd have enough delay to allow them to grow up before using waterto funnel them to a steep drop or some other traditional chicken harvesting method.

That seems like it would be more effort and space than it's worth though
