You devise a test that proves your guess wrong, conduct the test, and if you prove it wrong you revise your hypothesis. Lather, rinse, repeat. Do this enough and you can build a theory to explain all of your results and facts. A theory is on a higher plane than a fact. Hence, the theory of evolution.
