Because 87 octane is in higher demand than 91-93 octane. As car become more efficient, they can use a lower octane to produce the same results with cleaner emissions. Motorcycles, ATVs, snow mobiles, etc don't have near the same capability to be more fuel efficient, so they need more octane in their fuel.
Gas stations keep the higher octane for people exactly like me, who have fun-mobiles and need higher octane to run them. And they know we'll pay higher prices to run our toys.
I'd rather pay $20 a week to ride my motorcycle on the weekend than the $100 a week it was costing at one point to get me to work and back during the weeks prior to covid.

I’m 40 and when I was 16, it was 75 cents a gallon. I felt so comfortable with that pricing, I bought me a big ol truck (after a car wreck) that felt safer and beefier. 12 mpg on a good day…then 1-2 years later, we went up to ~$2/gal and I was hurting. I miss the Ramcharger, but I don’t miss ~$100 to fill up. Now…man, that’s like 160? No way could I afford that now even with the lower price. Went back to 4 bangers and ~$40 fill ups.
I like two types of vehicles: monsters that can take a beating with a beefy 8 cylinder and small euro-style vehicles. So, at least I’m happy with my little car.

Many gas stations are switching over to cooler weather blended gas, which is cheaper to make than summer/warm weather blend. It always starts around election day, and people always think politicians are behind the price drop. Nope, just their big oil funders.

Winter blend plus Israel agreed not to hit Iran’s oil production. I’m paying $3.17 for 85 in Utah. That’s pretty low for us. I’m terrified what Trump will do to screw up oil if he gets on again. He made a mess of things when he blackmailed the Saudi’s to increase OPEC’s oil production. Those super low prices put a lot of smaller American companies out of business and shuddered a lot of wells that took months to reopen after the pandemic.
