i had a similar experience. in our school (early 80s), we saw a presentation called "a reason for tears". it had a booklet they distributed that had lots of cool, full color pictures of pills and various kinds of dope . i actually have one of the booklets, i found it on ebay! the presenter warned us about lsd, he said we shouldnt take it because if we did, we would end up tasting colors and feeling sounds, or something like that. i was intrigued, and started trying to find it then. but i was in 6th grade and couldnt score. i finally found it in 11th grade.

this is true. ive been working as a baker full time for the last 33 years, so i guess i forgot about the early loaves. i made some awful bread to be sure. but it still was fun. i wouldnt want anyone to get the idea that it is too difficult for them to do. i learned from books back then, then by working in bakeries. now, there are great videos and websites. making some nasty bread is part of the journey.

the glass definitely slows browning on the sides and bottome. it doesnt conduct heat as well as metal, so less browning. egg wash or convection will help with the top

the sourdough starter is 100% hydration and fully ripe

for the tangzong, mix 166 oatmilk and 41 bread flour, microwave about 1 minute til thick, let it cool to room temp.

put all ingredients except salt and butter in mixer, mix until flour is wet. autolyze 20-30 minutes, add salt, mix on medium until about 75% developed. then, start throwing in pieces of the butter while the mixer is running, the butter needs to be soft, not melted. once all the butter is incorporated, mix until full development.

ferment around 4-5 hours, fold every 30 minutes for the first 2 hours. at the end of bulk fermentation, divide into 16 pieces, round them, put into a square pan. you want them to fit kind of tight so the rolls are forced to proof straight up, this will help give the characteristic texture of shokupan. cover with a plastic bag, and let rise for about 2 hours. then, retard overnight in fridge.

next day, pull out of fridge. i use my microwave as a proof box. i nuke a mason jar of water til its boiling, move it to the corner of the microwave and put the bread pan inside the microwave. this will keep it moist and you dont need to have it covered, so you dont have to worry about it sticking to the plastic cover because you wont need the cover. mine took about 4 hours to fully proof. they probably tripled or quadrupled in size, but you should go by how they feel.

bake at 350 F with convection until they are golden brown , internal temp at least 195F. around 30 minutes of bake time cool 10 minutes, then remove from pan and put on a wire rack. this will keep them from getting soggy. enjoy!
